Ingredients:
1 cup flour
1 cup brown sugar
1/2 cup butter or margarine, melted
3/4 cup rolled oats
1 teaspoon cinnamon
4 cups sliced fresh rhubarb
1 cup sugar
1 cup water
2 Tablespoons cornstarch
1 teaspoon vanilla extract
red food coloring (optional)
Directions:
In a large bowl combine flour, oats, brown sugar,
cinnamon and butter.
Mix until crumbly.
Press half of mixture into a greased 9 inch square pan.
Cover with rhubarb.
Combine sugar, cornstarch and water in small saucepan.
Cook and stir until thickened and bubbly;
cook and stir two minutes more; remove from heat.
Add vanilla and coloring. Pour over rhubarb.
Top with remaining crumbs.
Bake at 350 degrees F for 50 to 60 minutes.
