Pastel Peppermint Patties

Servings:
makes about ? patties.

Ingredients:
1/4 cup butter
6 Tablespoons light corn syrup
1 1/2 teaspoons peppermint extract
4 1/2 cups powdered sugar
red and green liquid food coloring

Directions:
Line two cookie sheets with waxed paper.
Blend butter, corn syrup and extracts in a large bowl.
Add powdered sugar, kneading with hands at end.
Divide dough into three parts:
Leave one white, add red to one and green to the third.
Roll into 3/4 inch balls. Poll balls in sugar and flatten
with bottom of glass or cookie press.
Let dry on waxed paper 3 hours,
then overnight on wire racks.
Store in airtight containers.

Serving Suggestions:
Experiment with flavors and matching colors.
Decorate with frosting (pink rosettes and green leaves).
Perfect for Christmas parties, baby showers, etc.
