Ingredients:
2 eggs
1 1/2 cups milk
2 Tablespoons butter, melted
3 cups flour
1 cup sugar
2 teaspoons baking powder
1 cup semisweet chocolate chips
1 to 2 Tablespoons instant coffee
crumb topping (see below)
Directions:
Preheat oven to 375 degrees F.
Grease and flour 9 x 13 inch pan.
Beat together eggs, milk and butter.
Beat in flour, sugar and baking powder.
Stir in chocolate chips and instant coffee
just until blended.
Spread in pan. Sprinkle with crumb topping.
Bake 25 to 30 minutes or until toothpick comes out clean.
Cool ten minutes, cut and serve.
Serving Suggestions:
Use flavored instand coffee, i.e. Irish Creme.
Crumb Topping:
6 Tablespoons flour
4 Tablespoons brown sugar
4 Tablespoons powdered confectioner's sugar
3 Tablespoons butter
1 teaspoon cinnamon
Mix ingredients with pastry blender, fork, or clean hands.
